Buying and Selling Holiday through salary sacrifice

I am looking at implementing a Salary Sacrifice scheme for buying and selling  holidays and would value any technical advice/detail  from members on how the currently deal with leavers who are in the scheme, e.g. if a leaver has holiday left do you process this through the payroll ? Do you deduct the remaining months of the salary sacrifice agreement when they leave? Any advice would be greatly appreciated.
